Aillio unveiled new prototype Bullet coffee roasters today at the World of Coffee in Copenhagen. The current model, the Aillio Bullet R1 V2 will continue to be produced and supported, called the Bullet Classic R1. The new Aillio Bullet R2 will sell for $500 more than the Classic , and in addition there will be the R2 Pro model, a 220 volt machine that can roast a larger maximum batch of 2.65 Lbs.

What’s the latest update on production and arrival of the Bullet R2 coffee roaster models?
01/07/25: The Bullet R2 Pro is in stock at Sweet Maria’s store, though we are selling though them at a good pace. The Bullet R2 is in transit via Ocean Freight and projected to arrive first half of February. The Bullet R1 V2 is in stock and still has all the compelling features that make Bullets great. We will continue to carry and support the R1 V2 alongside the R2 models.
12/04/24: We will be putting the R2 Pro on sale today on the Sweet Maria’s store. We have 60 units available from our first shipment. We’ve updated our review on the product page to provide a bit more insight into our experience and to provide some context for who we think this roaster is for. At $4999 we want to ensure that anybody making that investment truly wants/needs what this machine has to offer. The R2 Pro ships with a standard cooling tray at this time. The Pro cooling tray will ship separately to Pro purchasers free of charge in first quarter of 2025, but exact date is not known.
11/26/24: As noted, the first R2 model in production is the 220 volt R2 Pro … and if the shipment leaves on time as expected, we should have them here at Sweet Maria’s December 7 to 10. They are shipping by air freight so we feel confident about the timeliness of arrival. As we planned, now that our shipment is imminent we are ready to take orders for the R2 Pro at Sweet Maria’s.
People considering the R2 Pro probably already know it is initially shipping with the standard cooling tray, not the new Pro cooling tray. You will receive the Pro cooling tray, as soon as it is produced in early 2025, but we don’t know the exact ship date on those yet. The Pro cooling tray and shipping is included in the R2 price, plus you have the standard cooling tray to keep as a backup. If you have researched the R2 Pro, you likely know the features. It has only slightly larger capacity than the standard model Bullets (1.2 kgs / 2.65 lbs. versus standard models 1 kg / 2.2 lbs.) It’s a small difference but if you are roasting pounds of coffee to sell, it matters … because you can yield a full 2 lbs per batch factoring in weight loss. The added oomph of the 220 volt is welcome as well. If you’re considering the Pro, you should be comfortable with things like updating the firmware (super easy to do now!) and expect a few snafus, knowing that Aillio will supply updates quickly. We have had a few buggy incidents on our R2 Pro demo unit we have been using for 1 month, but nothing that kept us from roasting.
11/06/24: We have been test roasting on the Aillio Bullet R2 Pro pre-production unit Aillio supplied. Since the Pro cooling tray is not going to be available for a while, they shipped this unit with the standard cooling tray. It actually manages to cool 1.2 Kg roasts, but it certainly is a lot of coffee. The R2 unit is experiencing some jitters with the front display, a know issue that should resolve with a new firmware update coming soon. We had a couple failed roasts too which we think are power issues. But it managed several full batch roasts yesterday very well. The documentation isn’t really available yet so we are flying blind a bit, but we will have this R2 downstairs and available to see at our 2nd Crack Saturday hours this weekend, Nov. 11 from 12-3 pm at Sweet Maria’s. 10/25/24: We just received and unboxed pre-production R2 Pro Roaster. We’re currently setting this up at our warehouse to test, answer questions we’ve received, and build our own knowledge base in anticipation of having units for sale. For those wondering, we still don’t have an ETA for when R2s will be available for purchase. Based on our conversations with Aillio and their recently published a newsletter, which covers updates on the R2 models from their end, manufacturing is starting to ramp up but it still constrained. We anticipate that even when units are available, supplies will be tight to start. The newsletter also includes a link to this YouTube video of Jonas Lillie (CEO of Aillio) answering questions about the R2 and what to expect over the coming weeks and month. We think both the newsletter and video are worth checking out. We’ll continue to post updates here, as well as to social media and in our newsletter as we see more developments.
9/24/24: We’re in touch with Aillio weekly on the production of the R2 line, and over the past couple weeks (September 9th-23rd) the conversation has centered on clarifying when a demo unit will be available and when the full production run will ship. Our first goal at Sweet Maria’s is to get a production-spec R2 in house so that we can review it and share more information with customers.
The latest update is very encouraging, but we still don’t have the R2 on hand. We feel there’s a possibility production might be pushed back a bit, which is the reason Sweet Maria’s isn’t taking preorders for the R2 line yet. We want to be 100% sure of arrival date before taking anyone’s hard-earned money!
That said, we appreciate Aillio’s approach to manufacturing and doing things the right way. We feel its better to ride out a slight delay than to deal with a product that experienced a rushed production.
We will continue to update this page weekly and with any developments. The Bullet R1 V2 is still selling well, which is no surprise given that it’s proven roaster that will continue to be supported and offered in the Aillio lineup for the foreseeable future.
(Note on R2 Pro: Aillio let us know that initially the R2 Pro will ship with the standard R2 cooling tray, and the Pro cooling tray will ship later. In recognition, buyers will then have 2 cooling tray units, which might be a nice plus.)
What are the differences between the Bullet R1, R2 and R2 Pro?

Comparing the Bullet R1 and Bullet R2 Coffee Roasters
The new Bullet R2 Pro model coffee roaster is a 220 volt only version which will allow for a larger batch capacity of 1.2 Kgs. Let’s set aside the Pro model and compare the features of the Bullet R1 Classic and the Bullet R2. (We hope to have a pre-production tester here soon, but right now we are going off Aillio’s information and conversations we have had with them).
There are a host of small functional and design improvements that set the R2 apart from the R1:
- The R2 features 1700 watts of power versus the R1’s 1550 watts. It doesn’t translate into a larger batch capacity though, but we imagine it’s a good thing to have a little more oomph under the hood.
- Increased performance from the main circuit board means a tighter range of control and precision in managing the roaster performance. This is the +/- .5% power delivery range they are boasting with the R2 versus the R1. We anticipate this means the control of heat delivery to the coffee batch is in a tighter range, but not sure how that translates into roast experience.
- R2 features 10 power levels for the roast setting versus 9 on the R1
- Added sensors to adjust air flow, and to detect when a filter needs cleaning or changing are a welcome change. Flowsense is the name Aillio is applying to this adaptive air speed adjustment system.
- The internal diagnostic and warning for filter cleaning/replacement addresses one of the main issues users have with roaster performance … so it’s also a very welcome change.
- There’s improvements to the front panel UI, and a new built in illumination for the trier, to pull the coffee out and inspect it.
- We also are seeing a repositioning of the trier hole in the front so it doesn’t conflict with opening the drop chute, as it does with the Bullet R1.
- It’s a small thing, but we are seeing the drop chute for the finished coffee batch is curved upward on the ends on the Bullet R2, meaning errant beans won’t miss the cooling tray as they do with the R1 sometimes.
- New modular connections allow for easier access for maintenance, to clean the IBTS sensor at the front of the roaster, and (it seems) the rear filter cleaning will be easier as well.
Will You Be Able to Upgrade from a Bullet R1 to R2 ?
If you have a Bullet R1 Roaster, will their be an upgrade kit to the R2 spec? I asked Jacob at Aillio about this, and he said that it’s in the works! However they don’t think it can be performed by the end user. It will mean sending the machine in to Aillio in Taiwan at this point. In any case it won’t be available until after the R2 production is in full effect. We will update this as we learn more.
When Will the Bullet R2 and the Bullet R2 Pro be available?
I asked Aillio about the production timetable. For the World of Coffee show in Copenhagen (June 2024) they only had a couple units to bring and demonstrate. But Jacob says they are ready for production. However initial production will be a very, very short run of about 30 units. In practicality that isn’t going to get out to the general public in a real way. We anticipate not truly seeing the R2 available until late 2024, we hope by late October, November or so. We will update this when we have more information.
Is the +$500 Price Tag for the Bullet R2 Roaster worth it?
Since we don’t have a unit to test, we can’t build a compelling case on this, but we hope to soon. But considering the track record with the Bullet R1 model, the continuous improvements we have seen, we have high confidence that when put to the test the R2 improvements will be significant. On paper they may seem like close cousins but the proof will be in the hands-on experience. We see that Aillio has parlayed the huge amount of real-world feedback from Bullet users into new features in the R2, and think this will be evident when put to the test.
Also, the continued production of the R1 Classic Bullet versus the often seen tactic of forced obsolescence is welcome. We will continue to enthusiastically sell and support the R1 Model, now and after the R2 is available. More options means people can find the roaster that is right for them, and the feature set that suits their interest.
For some, when dropping $3500 for a coffee roaster, it will make sense to just add another $500 and get the latest. We think many will continue to see the roaster they are looking for in the R1 Classic model. (Heck I am still using my iPhone 11 Pro and it does what I want).
I will say this: the R2 and R2 Pro do look amazing. Aillio does do great industrial design for sure.

Yes will definitely keep that in mind. One issue I imagine would crop up is itās part of the 220 volt R2 pro power system so I am not sure what the operating voltage would be, and if it would draw too much power ? Just wondering.
I watched a video from one of the 2 brothers of Aillio that question was asked and he said yes it would be!

I’ve got one of the early R1’s (bought it from you Jun 2018), I thought at one point there was going to be a kit to upgrade to the IBTS sensor (and maybe an upgraded power supply)? Did I miss them or are they still available? If they are, what are your thoughts on updating those vs waiting for the R2?
I think the IBTS sensor upgrade is a good idea, but if a machine is maintained and cleaned well, I think keeping it more āstockā is a good approach. Even with the RoastTime software there were some beta releases that caused trouble. If itās working without them and youāre happy with it, maybe thatās the best spot to be in. I do think that perhaps leapfrogging to the R2 makes sense vs trying to upgrade from V1 to V2 ā¦ Iāll ask Julia to weigh in since she is the real problem solver on this. Also we havenāt used an R2 yet so we are sorta speculating here!
For those of you lusting after the P2 Pro but lacking 240V power near where you roast, here’s a solution that doesn’t require an electrician: the EcoFlow Delta Pro 3. (If not this particular model/brand, there are similar offerings from Jackery, Bluetti, etc.) It’s a 4kWh UPS that goes up to 4000W continuous power over a variety of outputs, including NEMA 6-20R and L14-30R. This will power the P2 Pro at its full 2300W for almost 2 hours. In reality it will probably run a lot longer since the P2 Pro probably only draws the full 2300W during preheat and sporadically thereafter.

I am going to get the Bullet R2 Pro. I did need some other electrical work on my back patio, so I got an electrician to install a 220V circuit for my roaster but we donāt know what style of 220 plug will come with the R2 Pro. Can we find out from Jacob? Thanks.
Thatās planning ahead! I think the R2 pro is going to be amazing. Canāt wait to get one here to try once first production starts. āEnd game roasterā I heard someone say. Anyway I am sure it will be a standard NEMA plug for USA but not sure yet if 20 amp or? I will find out.
I got an answer directly from Aillio about the wattage and plug adapter needed for US Bullet R2 and R2 PRO orders.
An R2 Pro provides 2300W of power at the maximum, which means it is estimated to draw 10-12A on a 208V power line. factoring in the headroom for power surge, voltage drop, etc, the R2 Pro will at least require a 208V 15A power line for it to work.
Our power cord can both handle 110V and 220V voltages, therefore, for both 110V and 220V specifications of the Bullets being shipped out to the US, we provide the plug type as shown the in photo.
The Nema 6-15 straight blade plug doesn’t come standard with the roaster. Users would need to source for an adapter to fit, if their household outlet for a 220V is a Nema 6-15 straight blade plug. For instance, in Taiwan you would need to use an adapter.

I’m anxious to see a hands on review of these two machines. One thing I’ve been wondering, insignificant though it may be, is if the display will be multi color or mono. Different colors can make it easier to see pertinent info.
We are hoping to have a working R2 soon to test and will definitely report on this.
Will the upcoming R2 Pro have some type of financing available such as through Affirm? This would make obtaining the machine more possible and realistic for myself. Thanks, Bruce D.

I see where Aillio has started taking pre-orders for the new Bullets. They say units will be shipping late September. How much lag time before you have these in stock?
I think we will have them available about the same time domestically as we already have position in the production queue. We just feel more comfortable with only taking orders when we can be assured of the arrival date in US. So for now we have the email notification on the product and once we have the actual shipment date set we will take the orders. Lately, the ocean shipment has been fast and reliable.
