Here we’ll provide the latest details on the production and availability of the Bullet R2 and R2 Pro.
We receive a lot of emails inquiring about Bullet R2 availability, so to save you the trouble of messaging us asking for the latest news, we’ll provide latest updates here. We’ll do our best to share what we know about Bullet R2 availability (timelines, etas, and stock numbers) as well as updates on production (issues, changes, and fixes) as we learn them. Our goal is to get this information to you quickly and transparently, but as things are rather fluid please realize that things can change and these comments are only based on what we know at the time of writing.

September 4, 2025:
ROASTERS: We have submitted a new order for all models of the Bullet roaster with Aillio, including R1, R2, and R2 Pro. These units will take some time to manufacture, but the turnaround should not be as long as it was with our last order. Based on Aillio’s estimates, we are hoping to receive this shipment before the end of the year. At this time, the Bullet R1 is sold out, but we still have a good stock of R2 roasters and a few more R2 Pro units.
PRO COOLING TRAYS: Our 30 Pro Cooling Trays arrived in the US this week, and the shipment is clearing customs today. We anticipate these will be delivered to our warehouse soon, possibly before the end of this week. Once we receive these units, we will promptly ship them to any R2 Pro customers of ours who are currently awaiting their trays. Afterwards, anyone who purchases an R2 Pro from Sweet Maria’s can expect a Pro Cooling Tray to be included with their shipment without delay. Now that Aillio has Pro Cooling Trays in mass production, we do not anticipate delayed shipments will be necessary going forward.
August 15, 2025:
ROASTERS: We received our shipment of Bullet roasters earlier this week. All pending orders were promptly shipped to our customers, and we will continue shipping new Bullet orders within 1-2 business days from purchase while supplies last.
PRO COOLING TRAYS: 45 trays were delivered to our warehouse earlier this week, and all were quickly sent out to customers who purchased R2 Pros late 2024 or early 2025. We are still expecting more Pro Cooling Trays, specifically 30 units which coincide with the latest shipment of R2 Pros that we received. Aillio has confirmed that these trays have finished being manufactured, and we anticipate they will be shipped to us from Taiwan in the next week or so. Once received, we will be shipping these trays to any customers who have recently purchased an R2 Pro from us. More updates to come.
August 7, 2025:
ROASTERS: Since our last update, we’ve learned that our container of Bullet roasters has completed customs clearance and FDA review. At this point, the container is essentially waiting to be collected from the port. We were able to schedule pick up for Monday morning, and delivery to our warehouse should happen by noon that same day. While that means we won’t be hitting our target ship date of this Friday, you won’t have to wait too much longer. If all goes well with the delivery on Monday, we will begin shipping orders on Tuesday, August 12th. More news to come!
PRO COOLING TRAYS: Production for these cooling trays was completed at the end of July, and just this week we received word from Aillio that the shipment has officially left Taiwan. The current ETA is Sunday, August 10th, which is when the shipment is expected to arrive in the US. Customs clearance will commence the following day on Monday, and our hope is that the trays will be delivered to our warehouse later that week so we can begin promptly shipping them out to customers like yourself. We will provide further updates similar to this one as we learn more.
August 1, 2025:
ROASTERS: We received the exciting news this week that our container of Bullet roasters has touched down at the Oakland port. This long-awaited shipment includes an assortment of Bullet models, including R2, R2 Pro, and R1 v2. It’s unclear if the container has been unloaded at the port or if it’s still on the water, but we’re optimistic that these units will be delivered to our warehouse sometime next week (the week of 8/4).
Starting today, we are opening up sales for all three Bullet models. We anticipate that we’ll begin shipping orders out on or around August 8, barring any unexpected delays. Click here to check out the Bullet roasters on the Sweet Maria’s website.
For Bullet R2 Pro purchases – The cooling tray shipping with this roaster is the standard cooling tray. The Pro cooling tray will ship to R2 customers separately after manufacturing is complete, at no extra cost. There’s no definitive timeline for when the Pro cooling tray will be available, but we’ll continue posting updates here as we learn more. Speaking of which…
PRO COOLING TRAYS: Aillio has confirmed that they have finished production for 45 Pro cooling trays, and they intend to ship those to us soon. They have not provided us with a concrete shipping date just yet. As a reminder, this particular batch of units is owed to customers who purchased R2 Pros late 2024 or early 2025. Coinciding with the 30 R2 Pro units which just arrived, Aillio is currently manufacturing an additional 30 Pro cooling trays which they will ship to us at a later date. Once we receive either shipment of Pro trays, they will be individually shipped from our warehouse to R2 customers in chronological order based on the original purchase date.
July 21, 2025:
PRO COOLING TRAYS: Previously we detailed why Aillio paused production of Pro cooling trays to retool an exterior plastic component, leading to extensive delays in delivering the already late trays to end users. Today they confirmed that they have received the retooled parts, and Pro cooling trays are back in production. Their goal is to see what their production throughput is over the course of this week and then to provide us with a concrete date for the shipment of the Pro cooling tays. The priority is the 45 cooling trays owed to customers who already purchased R2 Pros, followed by trays for the latest shipment of roasters so that going forward they are delivered together.
We’re hopeful that we’ll be able to give Sweet Maria’s customers a concrete timeline in about a week or so. We explained to Aillio our need for more frequent and meaningful communication, and to their credit they have been more open and regular with their updates. As usual we appreciate our customers for checking in on what’s going on and for being pretty levelheaded about the whole situation.
July 9, 2025:
ROASTERS: Our restock of Bullet R2, Bullet R2 Pro, and Bullet R1 V2 roasters is “on the water” which is a slick way of saying in a container ship crossing the Pacific Ocean. With any luck they will arrive in a few weeks and clear customs without any delays. Once we have the Bullet R2 and Bullet R1 V2 roasters in our warehouse, we’ll open up sales for those units. However, the Bullet R2 Pros are another matter, and we’re still deciding what the best path forward is for sales of the Pro units.
Unfortunately, the Pro roasters (like the first batch we received) are being delivered with the standard cooling tray only. The Pro cooling tray will be delivered separately at a later date. This has caused totally reasonable consternation for customers who have purchased R2 Pros and have still not received their Pro cooling trays, so we’re evaluating what we want to do when the next batch of Pro roasters arrives.
PRO COOLING TRAYS: We received an update from Aillio on July 4th that they had to pause production to retool an exterior plastic component of the Pro cooling tray that had a higher than acceptable defectIn coffee, a defect refers to specific preparation problems with the green coffee, or a flavor problem found in the cupping process. Bad seeds in the green coffee... ...more rate. Aillio expects the retooled parts to arrive this month, which will allow production to restart.
There is considerable (and reasonable) frustration amongst R2 Pro owners over the ongoing delivery delays for the Pro cooling tray. As the party responsible for delivering the cooling trays to our customers we share and feel your frustration too, since we can’t deliver products that we don’t have. We appreciate Aillio’s approach, choosing to stop and fix problems rather than continuing to deliver a product they learn isn’t up to par, but it has meant that R2 Pro owners have been left wondering what’s going on and left them without a component of their purchase. We continue to advocate on our customers behalf for swift delivery of the Pro cooling trays once they’re available.
May 15, 2025:
The first 15 (of 60 total) PRO cooling trays are in transit to Sweet Maria’s with an expected delivery of May 20th, and we are pressing Aillio to expedite the delivery of the remainder. This first shipment of 15 will allow us to begin sending cooling trays to the very first customers who ordered their R2 PRO from us in December 2024. We will be sending cooling trays to our customers based on order date, starting with the earliest orders from December 2024 and working forward. We feel, as you probably feel, that the fulfillment of the PRO cooling tray has left a lot to be desired, but we’re doing our best to be transparent about where we’re at with delivery and to relay any new information we get from Aillio as soon as we get it.
May 1 2025:
We have received our 55 units of the Bullet R2 from Taiwan. We are preparing them for shipment in our warehouse and anticipate starting sales in the next few days. Make sure you’re signed up for back in stock notifications on the product page. We will communicate when ordering will open to that list first, followed by social media and then our newsletter shortly thereafter.
On Pricing: Unfortunately, we have had to increase the price of the Bullet R2 by $100 to help us offset increased costs incurred from tariffs and shipping. Even with the price increase, we are not fully covering the increased costs — in other words, we are still making less money on each sale of a Bullet R2 than anytime earlier this year. We debated our ability to completely eat the cost increase on your behalf, but in the end we decided it was not possible to do that. If the situation changes and the costs decrease for future orders, we will reduce our price as well.
April 23 2025:
We will have 55 units of the Bullet R2 (120v) departing Taiwan imminently, being shipped by air frieght. These should be available to offer around May 5 or sooner. Check our product page to see: Aillio Bullet R2

April 16 2025:
We have news that a shipment of Bullet R2 roasters (120v) will be ready to ship by air next week. Bullet has been checking them individually for the “green coffeeGreen coffee refers to the processed seed of the coffee tree fruit. Coffee is a flowering shrub that produces fruit. The seeds of the fruit are processed, roasted,... ...more leaking from the front” issue. They say a modified drum will be available soon as well. The mixed shipment of R2 Bullet Pro, more R2 120v version and R1 V2 is still delayed but should be ready to ship in May. We don’t have a new ship date for Pro Cooling Tray yet … was supposed to be in April but here we are at the 16th with no news.
April 4 2025:
- AIllio Bullet R2: Aillio briefly paused production to investigate an issue where some coffee beans were exiting the bean door of the Bullet R2 during roasting. Of the R2 units we sold, we only have 1 reported case of this issue, but Aillio decided to stop distribution to definitively solve this problem. We believe that simply adding weight to the door handle could resolve it, but Aillio has found that a combination of factors might be at play. For some users it was resolved with “drum seasoning,” meaning it lessened and disappeared after doing successive roasts that coated the drum interior with some residue. They also found that moving the front drum blade to a slightly different position seemed to help. They are currently updating the drums to this new spec, and we await an update from Aillio about Bullet R2 availability next week.
- AIllio Bullet R2 Pro: The issue impacting the R2 roaster doesn’t seem to be an issue with the R2 Pro model. However, our next shipment of R2 Pros is scheduled to be a mixed container with R2, R2 Pro, and R1 V2 roasters, so the production impacts on Bullet R2 availability also affects the shipment of the R2 Pro roasters.
- Pro Cooling Tray: While we were originally told they would ship in March, we have not been notified of any shipments yet. The latest news from Aillio is that a small number of cooling trays entered production in March and that they expect production to begin ramping up in April.
