Wild Note

A “wild note” in coffee is a general characterization that connotes something foreign or exotic in a flavor profile, usually somewhat unclean. This can be found in some Indonesian and East African coffees, flavors of earth, foresty notes, or wild game. For example Yemeni coffees have wild notes of hide, leather, earth, and savory spice. To some these are defect flavors. The term borders on ethnocentricity for sure, a bit problematic!
