The process of making an infusion of water and roasted, ground coffee. In the most basic sense, hot water is added to coffee ground to produce a drink. Some brewing methods (espresso, turkish coffee) produce a dense concentrate while other methods (filter drip, vacuum pot) produce a cleaner, more refined cup.

Coffee brewing methods have changed much over time and are likely to continue to do so, but the basic principle of using water as a solvent to extract desirable flavor and caffeine from roasted coffee remains a constant.
