El Tambor So esproso

I posted about this last week in the Guatemala Finca El Tambor comments section, but wanted to put it here for a wider audience. We pulled some amazing SO espresso shots of this coffee. Very soft and creamy in the front of the shot followed by bright stone fruit and gingerbread finish. There is nothing sharp or biting in this shot at all, so maybe it might get lost in milk, but as a stand alone shot it is incredibly sweet. Whenever I’ve brewed this coffee in the clever or aeropress or whatever I’ve always found it to be sweet, but always found there to be a certain cloudiness to the front of the coffee, the body obscuring the fruit notes and whatnot until the finish. This cloudiness or obscurity really translates into a lovely composition in the espresso preparation.
